If you have never tried Jamaican jerk before, you might expect one thing above everything else: heat.

What Flavours Can You Taste in Jerk Sauce?

Scotch Bonnet chilli contributes fruity heat, while pimento (allspice) provides warm, aromatic spice. Thyme adds freshness and ingredients such as scallion, garlic and onion bring savoury depth.

Depending on the recipe, you may also notice sweetness, acidity or smoky notes. The result is a sauce where chilli is important, but never has to be the whole story.

Is Jerk Sauce Sweet, Spicy or Smoky?

Jerk sauce can be all three.

The Scotch Bonnet provides the spice, while some recipes use a little sweetness to soften and balance the heat. Herbs and pimento add fragrance and warmth rather than simply making the sauce hotter.

Smoke often comes into its own during cooking. Grilling or barbecuing jerk-seasoned food adds char and smokiness, creating another layer of flavour that works beautifully with the herbs and spices.

For me, good jerk should make you notice the flavour before you start thinking about how hot it is.

You should taste the herbs and spices, then feel the Scotch Bonnet warmth coming through behind them. Some people prefer gentle heat and others want serious fire, but the flavour should always be what brings you back for another mouthful.
