Instructions

  1. Coat the chicken with Badman Sauce, olive oil, salt and black pepper.
  2. Grill or pan-fry for 6–8 minutes per side until cooked through.
  3. Rest, then slice the chicken.
  4. Mix mayonnaise, lime juice, mustard and garlic to make the dressing.
  5. Place romaine lettuce in a large bowl.
  6. Add croutons, parmesan and sliced jerk chicken.
  7. Drizzle with dressing and serve.

4 chicken breasts
2 tbsp Jerk Centre Badman Sauce
2 romaine lettuces, chopped
80g croutons
50g parmesan shavings
4 tbsp mayonnaise
Juice of 1 lime
1 tsp Dijon mustard
1 small garlic clove, grated
1 tbsp olive oil
Salt and black pepper
