Caribbean Jerk Chicken Mango Salad with Sweet Yardie Drizzle Dressing

Fresh, colourful and bursting with island flavour, this Caribbean Jerk Chicken Mango Salad is the perfect balance of smoky, spicy, sweet and refreshing. Juicy slices of jerk-seasoned chicken are grilled until golden and lightly charred, then layered over crisp salad leaves with ripe mango, creamy avocado, red peppers, cucumber, red onion and fresh coriander.

The sweetness of the mango works beautifully with the warm Caribbean spices, while the lime adds a bright, zesty finish that lifts every bite. It is light enough for a summer lunch, bold enough for a BBQ table, and satisfying enough to enjoy as a main meal.

Duppy Conqueror — mild, aromatic and perfect with delicate seafood.

Instructions

  1. Coat the chicken with Duppy Conqueror Sauce, olive oil, salt and black pepper.
  2. Leave to marinate for at least 20 minutes, or longer for deeper flavour.
  3. Grill, pan-fry or BBQ the chicken for around 6–8 minutes per side until cooked through.
  4. Rest the chicken for 5 minutes, then slice into strips.
  5. Arrange salad leaves, mango, cucumber, pepper, red onion and avocado in a large bowl.
  6. Top the salad with sliced jerk chicken
  7. Then pour Yardie Drizzle over your creation.
  8. Finish with fresh coriander and serve immediately.

4 chicken breasts or boneless chicken thighs
3 tbsp Jerk Centre Duppy Conqueror Sauce
1 tbsp olive oil
1 large ripe mango, sliced
1 red pepper, sliced
1 cucumber, sliced
1 small red onion, thinly sliced
1 bag mixed salad leaves
1 avocado, sliced
Fresh coriander
Yardie Drizzle for dressing
Salt and black pepper
