Taste From the Ancestors is the best sauce for this cocktail because it brings gentle warmth and aromatic jerk depth without overwhelming the coconut and pineapple. Duppy Conqueror and Badman Sauce would be too powerful for this style of creamy cocktail.

Instructions

  1. 1. Choose your serve
    Decide whether you want a shaken colada or a frozen colada.
  2. A shaken colada is smoother, cleaner and more elegant. A frozen colada is thicker, colder and more indulgent.
  3. Add the ingredients
  4. Add the white rum, coconut cream, pineapple juice, fresh lime juice, sugar syrup and ⅛ teaspoon of Taste From the Ancestors to a cocktail shaker.
  5. For a slightly stronger jerk warmth, increase to ¼ teaspoon, but keep the amount controlled so the drink remains creamy and tropical.
  6. Shake with ice. Fill the shaker with ice and shake firmly for 12–15 seconds.
  7. Shake until the mixture is well chilled and the coconut cream has fully blended into the pineapple and rum.
  8. Taste and balance
  9. Taste a small amount before serving.
    If the cocktail tastes too sharp, add a touch more sugar syrup. If it tastes too sweet or creamy, add a small squeeze of lime. If you want more warmth, add one or two extra drops of Taste From the Ancestors and shake again briefly.
  10. Serve over fresh ice

Fill a hurricane glass, rocks glass or tall cocktail glass with fresh ice.

Strain the cocktail into the glass slowly so it keeps its smooth, creamy appearance.

Garnish with a fresh pineapple wedge, lime wheel and a light dusting of grated nutmeg.
