Use chicken thighs for the juiciest flavour. Chicken breast works well too, but thighs give the broth more richness.
Do not overcook the noodles. Add them near the end so they stay soft but not mushy.
For a clearer broth, keep the soup at a gentle simmer rather than boiling it hard.
A squeeze of lime before serving makes the soup taste brighter and fresher.
For extra depth, cook the chicken on the bone first, then remove the meat and return it to the soup.
Add more stock if the noodles absorb too much liquid while sitting.
For a stronger jerk flavour, stir in a small spoon of Duppy Conqueror just before serving.

Instructions

  1. Heat the oil in a large soup pot over a medium heat.
  2. Add the chicken and season with Jerk Centre sauce, thyme, black pepper and a little salt.
  3. Cook for 4 to 5 minutes until the chicken is lightly browned.
  4. Add the onion, garlic, carrots, red pepper and spring onions.
  5. Stir well and cook for another 4 minutes until fragrant.
  6. Pour in the chicken stock and bring to a gentle simmer.
  7. Cook for 20 minutes, or until the chicken is tender and cooked through.
  8. Add the noodles and cook according to the packet instructions.
  9. Taste and adjust the seasoning if needed.
  10. Serve hot with fresh herbs, lime wedges and extra Jerk Centre sauce on the side.

Ingredients

500g chicken thighs or chicken breast, sliced
1½ tablespoons Jerk Centre Taste From the Ancestors or Duppy Conqueror
1 onion, finely sliced
2 garlic cloves, crushed
2 carrots, sliced
1 red pepper, sliced
2 spring onions, sliced
1 litre chicken stock
150g noodles
1 teaspoon fresh thyme leaves, or ½ teaspoon dried thyme
½ teaspoon black pepper
1 tablespoon oil
Salt to taste
Fresh coriander or parsley to garnish
Lime wedges to serve
