The Jerk Dark & Stormy is a bold Caribbean twist on a classic rum cocktail. Deep, rich dark rum meets fiery ginger beer, fresh lime and a tiny touch of Jerk Centre jerk sauce to create a drink that is smooth, spicy, refreshing and full of island attitude.

The ginger beer brings warmth and sparkle, the lime adds a sharp citrus lift, and the dark rum gives the cocktail its deep, molasses-style richness. The jerk sauce adds an unexpected savoury kick, giving every sip a little heat, depth and character without overpowering the drink.
This is the perfect cocktail for BBQs, jerk nights, summer evenings, parties or anyone who enjoys a darker, punchier drink with proper Caribbean flavour. It is refreshing, fiery and seriously moreish.
Bartender Tips
Use a good-quality ginger beer rather than ginger ale. Ginger beer gives the cocktail a stronger, warmer spice that works beautifully with dark rum and jerk sauce.
Start with a very small amount of jerk sauce. You want a warm Caribbean finish, not a sauce-heavy cocktail. You can always add more, but you cannot take it away.
Fresh lime juice makes a big difference. It cuts through the sweetness of the ginger beer and keeps the drink bright and refreshing.
For the best-looking serve, build the cocktail slowly over ice and float the dark rum on top for a dramatic layered effect.
A chilli-salt rim works well, but keep it light so it enhances the drink rather than overpowering it

Instructions

  1. Fill a tall glass or highball glass with plenty of ice cubes.
  2. Add the fresh lime juice and a tiny touch of Jerk Centre jerk sauce to the glass.
  3. Stir gently to help the lime and jerk sauce combine.
  4. Pour in the ginger beer slowly, leaving a little space at the top of the glass.
  5. Add the dark rum over the top.
  6. For a layered look, pour it slowly over the back of a spoon.
  7. Stir once or twice if you want the flavours fully mixed, or leave it slightly layered for a more dramatic serve.
  8. Taste carefully.
  9. Add a little more lime if you want it sharper, a splash of sugar syrup if you want it sweeter, or the tiniest extra touch of jerk sauce if you want more heat.
  10. Garnish with a lime wedge, fresh ginger slice or mint sprig.
  11. Serve immediately while cold, fizzy and refreshing.

50 ml dark rum
150 ml ginger beer
15 ml fresh lime juice
1/4 teaspoon Jerk Centre jerk sauce, or a tiny dash to taste
Ice cubes
Lime wedge, to garnish
Optional: fresh ginger slice, mint sprig or chilli-salt rim
Optional: 5ml sugar syrup if you prefer a slightly sweeter cocktail
