Best Jerk Centre Sauce to Use

Yardie Drizzle — the honey, lemon and chilli flavour works beautifully with halloumi.

Instructions

  1. Brush the halloumi slices with Yardie Drizzle.
  2. Grill or pan-fry the halloumi for 1–2 minutes per side until golden.
  3. Grill the pineapple slices until lightly caramelised.
  4. Arrange salad leaves, cucumber, pepper and red onion in a bowl.
  5. Add the warm halloumi and pineapple.
  6. Mix lime juice with olive oil and a small extra spoon of Yardie Drizzle.
  7. Drizzle over the salad and finish with fresh mint or coriander.

250g halloumi, sliced
2 tbsp Jerk Centre Yardie Drizzle
250g fresh pineapple, sliced
1 red pepper, sliced
1 cucumber, sliced
1 bag mixed salad leaves
1 small red onion, thinly sliced
Juice of 1 lime
1 tbsp olive oil
Fresh mint or coriander
Black pepper

This Jerk Halloumi Pineapple Salad is delicious served with warm flatbreads, coconut rice, rice and peas, grilled corn on the cob or BBQ vegetables. It also works beautifully alongside jerk chicken, grilled prawns, roasted sweet potatoes or a Caribbean sharing platter.

For a lighter meal, serve it on its own with extra Yardie Drizzle on the side. For a bigger feast, pair it with grilled meats, seafood or plantain for a colourful Caribbean-style table.
