Jerk Halloumi Skewers – Sweet, Salty and Spicy Caribbean BBQ Flavour
These Jerk Halloumi Skewers are colourful, fun and packed with flavour. Salty halloumi, sweet pineapple and juicy peppers are brushed with jerk sauce and grilled until golden, smoky and slightly charred.

They are perfect for BBQs, summer parties, vegetarian platters or quick weeknight dinners. The contrast between the creamy halloumi, caramelised pineapple and warming jerk spice makes every bite delicious.

Chef’s Tips
Do not cut the halloumi too small or it may split on the skewers.
Pineapple caramelises beautifully, so let it catch a little colour. Serve immediately while the halloumi is soft and warm.

Taste from the Ancestors — the medium heat works perfectly with salty halloumi and sweet pineapple.

Instructions

  1. Soak wooden skewers in water for 20 minutes if using.
  2. Mix the jerk sauce, olive oil, lime juice and honey in a bowl.
  3. Thread halloumi, peppers, red onion and pineapple onto skewers.
  4. Brush the skewers generously with the jerk marinade.
  5. Heat a grill, griddle pan or BBQ.
  6. Cook the skewers for 8 to 10 minutes, turning regularly until golden and lightly charred.
  7. Brush with a little extra marinade during cooking.
  8. Garnish with coriander and serve hot.

1 red pepper, chopped
1 yellow pepper, chopped
1 red onion, chopped
250g pineapple chunks
1 tablespoon olive oil
Juice of ½ lime
1 teaspoon honey or maple syrup
Fresh coriander to garnish
