This Jerk Mango Daiquiri is a smooth, tropical cocktail with a bold Caribbean twist. Sweet ripe mango brings a rich, sunny fruitiness, fresh lime cuts through with a sharp citrus lift, and white rum gives the drink its clean, refreshing daiquiri base. The magic comes from a small touch of Jerk Centre jerk sauce, adding warmth, depth and a gentle savoury heat that balances beautifully with the mango.

It is bright, fruity, zesty and lightly fiery, making it perfect for BBQs, summer parties, Caribbean food nights or as a fun cocktail to serve alongside jerk chicken, grilled prawns, spicy wings or smoky ribs. The mango keeps it sweet and silky, while the jerk sauce gives every sip a little kick at the end.

Chef’s Tips:
Use ripe mango for the best flavour. Fresh mango gives the cocktail a naturally sweet, juicy taste, but good-quality mango purée also works well if you want a smoother finish.
Start with a small amount of jerk sauce, then adjust to taste. A little goes a long way, especially in a cocktail. You want warmth and character, not overpowering heat.
Shake well with plenty of ice to chill the drink properly and slightly soften the strength of the rum. For a frozen version, blend everything with crushed ice until smooth.
Add a little sugar syrup or agave if your mango is not very sweet. If the cocktail tastes too sweet, add an extra squeeze of lime to sharpen it up.
For a beautiful garnish, serve with a lime wheel, a slice of fresh mango or a light chilli-salt rim for extra Caribbean flair.

Instructions

Start by preparing your mango. If using fresh mango, peel it, remove the stone and cut the flesh into small chunks. Add the mango to a blender and blend until smooth, or use good-quality mango purée for a quicker, silkier finish.

Add the white rum, fresh lime juice, sugar syrup or agave syrup, and a small amount of Jerk Centre jerk sauce to a cocktail shaker. If you are using mango purée, add it directly to the shaker. If using fresh blended mango, strain it first if you prefer a smoother drink.

Fill the shaker with plenty of ice. Secure the lid tightly and shake hard for around 15–20 seconds, until the outside of the shaker feels cold. This chills the cocktail, slightly dilutes it and helps all the sweet, sharp, fruity and spicy flavours come together.

Taste the cocktail before serving. If it needs more sweetness, add a little more syrup. If it tastes too sweet, add an extra squeeze of lime. If you want more heat, add a tiny extra touch of jerk sauce and shake again briefly.

Strain the cocktail into a chilled coupe glass, martini glass or short tumbler. For a frozen version, add the mango, rum, lime juice, syrup, jerk sauce and a handful of crushed ice to a blender, then blend until smooth and slushy.

Garnish with a lime wheel, a slice of fresh mango or a light chilli-salt rim for extra Caribbean flair. Serve immediately while cold, fresh and vibrant.
