Shake the bottle thoroughly before measuring the sauce so that its spices are evenly distributed.

1. Prepare the glasses

Fill two large rocks glasses or hurricane glasses generously with ice. Place them to one side while you prepare the punch.
2. Create the jerk punch mixture
Add the dark rum, white rum, pineapple juice, orange juice, lime juice, grenadine, sugar syrup and Angostura bitters to a cocktail shaker.
Add ¼ teaspoon of Taste From the Ancestors Mild Hot Jerk Sauce. This should provide a refined background warmth rather than an intense chilli flavour.
3. Shake until chilled
Fill the cocktail shaker with ice, secure the lid and shake firmly for approximately 15 seconds. The outside of the shaker should become cold and lightly frosted.
4. Taste and adjust
Taste a small amount before serving. For a sweeter punch, add a little more sugar syrup. For additional freshness, add another squeeze of lime.
Those who prefer a more noticeable jerk warmth can add one or two additional drops of sauce, but add it gradually.
5. Pour and present
Strain the cocktail over the prepared glasses of fresh ice. Pour slowly to preserve its rich sunset colour and smooth appearance.
6. Garnish
Garnish each glass with an orange slice, lime wedge, cocktail cherry and a generous sprig of fresh mint.
Finish with a very light grating of fresh nutmeg across the top.
Serve immediately.

Make a Sharing Pitcher

To prepare approximately eight servings, use:

400ml dark Jamaican rum
200ml white rum
480ml pineapple juice
320ml orange juice
120ml fresh lime juice
80ml grenadine
60ml sugar syrup
1 teaspoon Taste From the Ancestors Mild Hot Jerk Sauce
8 dashes Angostura bitters

Stir everything together thoroughly in a large chilled pitcher. Add ice shortly before serving and garnish with orange slices, lime wheels, cocktail cherries and fresh mint.

A generous handful of ice cubes

To Garnish
2 fresh orange slices
2 lime wedges or wheels
2 cocktail cherries
Fresh mint leaves
A light grating of fresh nutmeg
