The Badman Bloody Mary is not a quiet cocktail. It is bold, savoury, fiery and full of attitude, created for those who like their drinks with depth, heat and serious flavour.

This Caribbean-inspired version takes the classic Bloody Mary and gives it the unmistakable Jerk Centre treatment. Smooth vodka forms the base, tomato juice brings body and richness, while lemon juice, Worcestershire sauce, black pepper and celery salt create that familiar savoury sharpness. Then comes the signature kick: Jerk Centre Badman Sauce.

Badman Sauce adds far more than heat. It brings layers of Scotch bonnet fire, Jamaican spice, warmth and depth, turning a traditional brunch cocktail into something more powerful, more memorable and more distinctive. The result is a drink with a deep red colour, a savoury backbone and a slow-building heat that lingers beautifully.

Chef’s Tips
Use good tomato juice

The tomato juice carries the whole cocktail, so use a rich, smooth, good-quality tomato juice. Avoid anything too watery, as it will make the drink taste flat.
Add Badman Sauce carefully
Badman Sauce is designed for serious heat. Start with ¼ teaspoon, mix well and taste. You can always add more, but you cannot remove the heat once it is in the glass.

Make it more luxurious
For a more premium version, add a dash of pickle juice, a pinch of smoked paprika and a garnish of grilled chilli or charred lime. This gives the drink a deeper BBQ-style character.
Serve with food
This cocktail works beautifully with savoury dishes. Pair it with jerk chicken wings, loaded fries, grilled prawns, Jamaican patties or a full Caribbean brunch.

 

Instructions

1. Prepare the Glass
Run a lime wedge around the rim of a tall glass. Dip the rim into chilli salt, jerk seasoning or a mix of celery salt and black pepper.
Fill the glass with ice and set aside.
2. Build the cocktail
Add the vodka, tomato juice, lemon juice, Worcestershire sauce, celery salt, black pepper and Jerk Centre Badman Sauce to a cocktail shaker or mixing jug.
3. Mix gently
Do not shake the Bloody Mary hard. Instead, roll it gently between two tins or stir slowly with ice.
This keeps the tomato juice smooth and prevents the drink from becoming too foamy or thin.
4. Taste and adjust
Taste before serving. Add more lemon juice if you want extra sharpness, more Worcestershire sauce for savoury depth or a tiny extra touch of Badman Sauce if you want more fire.
Because Badman Sauce is powerful, add it gradually.
5. Serve
Pour the drink into the prepared glass over fresh ice.
Garnish with a celery stick, lime wedge, fresh chilli and a pickled garnish if desired.
Serve immediately.

50 ml vodka
150 ml good-quality tomato juice
15 ml fresh lemon juice
1 teaspoon Worcestershire sauce
¼ teaspoon Jerk Centre Badman Sauce
Pinch of celery salt
Pinch of freshly ground black pepper
Ice
Optional Extras
½ teaspoon horseradish sauce, for extra sharpness
2–3 drops hot pepper sauce, for additional heat
Small pinch of smoked paprika
Dash of pickle juice, for a sharper deli-style finish
To Garnish
Celery stick
Lime wedge
Fresh chilli
Pickled onion or gherkin
Chilli salt or jerk seasoning for the glass rim

Pitcher Version for 4 Servings
200 ml vodka
600 ml tomato juice
60 ml fresh lemon juice
4 teaspoons Worcestershire sauce
1 teaspoon Jerk Centre Badman Sauce
4 pinches celery salt
4 pinches black pepper
Ice

Stir gently in a large jug, taste and adjust before serving over fresh ice.
