Jerk Mushroom Fajitas – Fast, Fiery and Full of Caribbean Flavour
These Jerk Mushroom and Pepper Fajitas are quick, colourful and packed with flavour. Juicy mushrooms, sweet peppers and onions are cooked with jerk sauce until smoky, tender and beautifully spiced.

This is a brilliant vegetarian dinner for busy nights because it is fast, easy and full of personality. Serve with warm wraps, salad, avocado, sour cream or a fresh lime drizzle.

Chef’s Tips
Use a hot pan so the mushrooms brown rather than steam. Do not overcrowd the pan. For extra texture, mix chestnut mushrooms with portobello mushrooms.

Best Jerk Centre Sauce to Use
Badman Sauce — ideal if you want fiery vegetarian fajitas with a serious kick.

Instructions

  1. Heat olive oil in a large frying pan.
    Add the onion and peppers, then cook for 5 minutes until softened.
  2. Add the mushrooms and cook until they release their moisture and start to brown.
  3. Stir in the Badman Sauce and smoked paprika.
  4. Cook for another 5 minutes until sticky and well coated.
  5. Finish with lime juice.
  6. Warm the tortillas.
  7. Serve the jerk mushroom mixture in wraps with your favourite toppings.

500g mushrooms, sliced
2 tablespoons Jerk Centre Badman Sauce
1 red pepper, sliced
1 yellow pepper, sliced
1 red onion, sliced
1 tablespoon olive oil
1 teaspoon smoked paprika
Juice of ½ lime
8 tortilla wraps
Lettuce, avocado or sour cream to serve
