Jerk Pork Belly Bites – Crispy, Sticky and Packed with Caribbean Flavour
These Jerk Pork Belly Bites are crispy on the outside, tender in the middle and coated in beautiful jerk flavour. The pork belly is marinated, roasted until golden, then glazed for a sticky finish that makes it perfect as a starter, party dish or main meal.

The richness of the pork belly works perfectly with jerk seasoning. You get sweetness, spice, smokiness and that irresistible caramelised edge that makes every bite addictive.

Chef’s Tips
Use pork belly with a good balance of meat and fat. Do not overcrowd the tray, as the pork needs space to crisp. For extra crispiness, finish under the grill for 2 to 3 minutes, watching carefully.

Instructions

  1. Place the pork belly cubes in a bowl and season with Badman Sauce, brown sugar, soy sauce, garlic powder, paprika, black pepper, lime juice and salt.
  2. Marinate for at least 1 hour, preferably overnight.
  3. Preheat the oven to 180°C.
  4. Place the pork belly on a lined baking tray, leaving space between each piece.
  5. Roast for 45 minutes, turning halfway through.
  6. Mix honey with a small extra spoon of Badman Sauce and brush over the pork.
  7. Increase the oven to 200°C and roast for another 15 to 20 minutes until sticky and crisp.
  8. Garnish with spring onion or coriander and serve hot.

Ingredients

1 kg pork belly, cut into bite-sized cubes
2 tablespoons Jerk Centre Badman Sauce
1 tablespoon brown sugar
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon black pepper
1 tablespoon lime juice
Salt to taste
Fresh coriander or spring onion to garnish

Badman Sauce — ideal for pork belly if you want bold heat and a fiery finish.
