Jerk Steak with Garlic Lime Butter

This Jerk Steak with Garlic Lime Butter is quick, bold and full of flavour. The steak is marinated in jerk sauce and spices, then seared until caramelised and finished with melting garlic lime butter for a rich, zesty finish.

It is perfect for a fast but impressive dinner. Serve with chips, roasted vegetables, rice and peas, salad or grilled corn for a delicious Caribbean-style steak night.

Chef’s Tips
Use a hot pan to create a good crust.
Always rest steak before slicing so the juices stay inside. Slice against the grain for the most tender bite.

Instructions

  1. Rub the steaks with jerk sauce, olive oil, black pepper, smoked paprika and salt.
  2. Leave to marinate for 30 minutes.
  3. Mix the softened butter with garlic, lime zest, lime juice and parsley.
  4. Set aside.
  5. Heat a frying pan, grill pan or barbecue until very hot.
  6. Cook the steaks for 3 to 5 minutes on each side, depending on thickness and preference.
  7. Rest the steaks for 5 minutes.
  8. Top with garlic lime butter and allow it to melt over the meat.
  9. Serve immediately with your chosen sides.

Ingredients

2 ribeye, sirloin or rump steaks
1 tablespoon Jerk Centre Badman Sauce or Duppy Conqueror
1 tablespoon olive oil
1 teaspoon black pepper
1 teaspoon smoked paprika
Salt to taste

For the garlic lime butter:

50g butter, softened
1 garlic clove, crushed
1 teaspoon lime zest
1 teaspoon lime juice
1 teaspoon chopped parsley
